Method:
1. Preheat the oven to 200°C fan-forced.
2. Prepare the rice following packet directions. Transfer to a large bowl. Add the spinach, chicken and goats cheese, season with salt and pepper.
3. Lay 1 sheet of filo pastry on a flat work surface. Brush with a little butter. Place another sheet of filo on top. Repeat with butter and the remaining filo.
4. Place the chicken mixture in the centre of the pastry, fold the pastry over the filling to make a parcel. Brush top of pastry with butter. Place on baking tray, bake for 10-15 minutes until golden and crisp.
