Method:
1 Combine lime juice, fish sauce, caster sugar, ginger and half the red onion on a plate. Add the fish, turn to coat. Set aside to marinade 5 minutes.
2 Drain any excess liquid and drizzle over the coconut milk.
3 Microwave the snow peas until tender.
4 Combine the tomato and remaining red onion, drizzle with olive oil and season with salt and pepper.
5 Place egg ring onto a serving plate to use as a mould. Arrange fish in the mould, top with the tomato mixture and snow peas. Carefully remove mould, top with avocado. Serve.
