Method:
1 Cook the rice following packet directions.
2 Heat a wok over a medium heat, add oil add the egg and swirl to make a thin crepe like omelette, cook 2-3 minutes until slightly sticky on top. Slide out onto a board, roll then slice into thin strips.
3 Increase heat to high, add a little more oil to the wok, add the carrot, chilli, coriander, cooked rice, sesame oil, fish sauce and soy sauce. Stir fry until heated through. Add the omelette strips and toss to combine. Serve with lime wedges.
