Method:
1. Preheat oven to 200°C fan-forced.
2. Heat oil in a small oven-proof frying pan over medium heat. Sauté onion and sweet potato for 5 minutes or until sweet potato is tender. Add the feta and green onions. Pour over the eggs, shake the pan to distribute the egg. Cook for 2-3 minutes or until egg starts to set around the edge. Transfer the pan to the oven, cook a further for 5-10 minutes or until egg is set.
3. Serve with sour cream and chives.
