Method:
1. Dissolve yeast in 2 tbs luke warm water in a large bowl. Cover and set aside for 2-3 minutes until bubbles start to form on the surface. Add plain flour, caster sugar, salt and enough chilled water to form a thick smooth batter (batter should be the consistency of thickened cream).
2. For butterscotch combine cream, sugar, butter, and vanilla in a saucepan over medium heat, cook stirring until smooth..
3. Half fill a small saucepan with oil, heat over medium heat until hot.
4. Slice apple into 2cm-thick slices. Dip apple rings into batter to coat. Deep-fry apple fritters in batches until golden and crispy. Serve with vanilla ice cream.
