Method:
1 Squeeze excess moisture from zucchini. Place zucchini in a large bowl. Stir in the flour, sour cream, egg, paprika and thyme, season with salt and pepper and mix until well combined.
2 Heat oil in a medium frying pan over medium heat. Drop heaped tablespoonfuls of mixture into the pan. Cook for 3-4 minutes each side or until golden and cooked through.
3 For the gremolata combine all ingredients in a small bowl, season with salt and pepper. Serve fritters with gremolata.
