Method:
1 Preheat non stick frying pan until hot. Add oil and steak, cook for 3-4 minutes each side for medium or until cooked to your liking.
2 Meanwhile, heat oil in another frying pan. Add fennel, cook stirring often until softened. Pour in the cream, reduce heat and allow to simmer until sauce reduces slightly. Crumble over the blue cheese, stir until combined.
3 Spoon the fennel on a plate, top with the steak. Pour over the blue cheese sauce, season with salt and pepper and sprinkle with chopped chives.
