Method:
1 Combine onion, garlic, coriander and satay sauce in a bowl, add the lamb, stir to coat. Cover and marinate for 5 minutes, or longer if time permits.
2 Thread the lamb onto the skewers. Heat oil in a char-grill pan on high heat. Cook the lamb for 2-3 minutes each side for medium or until cooked to your liking.
3 Cook the rice following packet directions. Add frozen peas, snow peas and chilli. cook until heated through.
4 Spoon the rice onto serving plate, top with the skewers. Serve.
