Method:
1 Preheat the oven to 200°C fan forced.
2 Place washed pumpkin in a microwave-safe bowl, cover and microwave on high for 6-8 minutes, or until tender, drain and cool slightly.
3 Combine the pumpkin, feta and basil in a bowl, season with salt and pepper.
4 Lay 1 sheet of fillo pastry on a flat work surface. Brush with a little oil. Place another sheet of fillo on top, cut in half crossways. Spoon half the pumpkin mixture into the centre of each piece fillo. Draw the edges together at the top to make a parcel, brush with olive oil and place each in a ramekin. Place on a tray and bake for 8-10 minutes or until pastry is golden.
5 Remove parcels from ramekins, serve with sprigs of watercress and lemon wedges.
