Method:
1 For red capsicum vinaigrette, process capsicum, vinegar, oil and salt and pepper, until smooth.
2 For red yellow vinaigrette, process capsicum, vinegar, oil and salt and pepper, until smooth.
3 Heat oil in a frying pan over high heat. Add bacon cook for 3-4 minutes or until crispy. 
4 Arrange baby endive on a plate, top with bacon, lobster medallions and drizzle with red and yellow capsicum vinaigrette. Serve.
