Method:
1 Carefully remove the meat from the lobster shell, reserve the shell. Heat oil in saucepan over medium heat, add lobster shells, onion, garlic, chilli, ginger and capsicum. Cook 1-2 minutes or until aromatic. Add stock and bring to the boil. Simmer for 10 minutes.
2 Cook pasta following packet directions. Drain.
3 Remove lobster shells from broth, pour into a bowl, top with pasta, lobster medallions, parsley and coriander leaves.  Serve.
