Method:
1 Pour oil into a medium saucepan until one-third full. Heat over medium high heat until hot.
2 Combine the flours and sugar with enough ice cold water to make a batter the consistency of thickened cream.
3 Coat the sliced apples in the batter and deep fry in batches for 3-4 minutes or until golden. Remove to a wire rack to drain.
4 For the cinnamon sugar, combine the sugar and cinnamon in a small bowl.
5 For the caramel sauce, combine the butter and sugar in a small saucepan, place over medium heat and cook 3-4 minutes or until sugar is dissolved, stir in the cream and simmer for 2-3 minutes until sauce thickens.
6 Place the fritters on serving plates, sprinkled with the cinnamon sugar, pour over caramel sauce. Serve.
