Method:
1 Heat oil in a frying pan over medium heat.
2 Whisk the eggs together in a small bowl with 2 tsp of water. Pour the mixture into the frying pan and cook the omelette for 3 minutes or until almost set on top. Slide the omelette onto a chopping board and carefully roll, thinly slice.
3 Cook the flat rice noodles following packet directions, drain.
4 Heat a little oil in the frying pan over a medium heat, add the kingfish, bok choy and chilli, sauté for a minute, add the cooked rice noodles, omeette, oyster sauce and fish sauce and toss to combine.
5 Spoon into a serving bowl and top with parsley, if desired. Serve.
