Method:
1 Heat oil in a frying pan over high heat. Add chicken and ginger, cook for 3-4 minutes or until cooked through.
2 Cook noodles following packet directions. Drain well.
3 For dressing, combine lemon juice, fish sauce and sugar in a small bowl, stir until sugar has dissolved.
4 Combine the chicken, noodles, cucumber, onion, tomato and coriander on a serving plate, drizzle over dressing.  Serve.
