Method:
1 Preheat oven 200°C fan forced. Unravel the pastry and cut three, 4cm-thick strips of pastry and place flat on a board. Wrap prawns in katifi pastry. Heat oil in a medium frying pan, over medium-high heat, add prawns and cook for 1 minute each side until pastry crisp. Transfer to the oven and roast for 4-5 minutes or until prawn is cooked through.
2 For basil pesto, process basil, pine nuts and garlic in a small food processor until combined. With the processor on, slowly add the oil until mixture is thick. Season with salt and pepper
3 Spoon basil pesto around plate, top with katifi prawns, serve.
