Method:
1 Cut 2 of the strawberries into 3 slices and thread onto 2 skewers.
2 Halve remaining strawberries and place in a saucepan. Scrape the seeds from vanilla bean and add seeds and bean to the saucepan with caster sugar, star anise and cinnamon stick. Pour over enough water to just cover strawberries and simmer for 4-6 minutes or until berries have softened. Cool and then strain syrup into a bowl, discarding berries and vanilla bean.
3 Sprinkle a little sugar over the skewered strawberries using a blow torch carefully to caramelize the berries.
4 Pour the juice into martini glasses, serve with caramelized strawberry skewers.
