Method:
1 Roughly chop 3 squid tubes, place in a food processor with onion, parsley, baby corn , lemon rind, breadcrumbs and 1 tbs oil. Process until well combined.
2 Press stuffing into remaining squid tubes and secure with toothpicks.
3 Heat oil in a frying pan over high heat. Add squid and cook for 2-3 minutes each side or until cooked through.
4 For salsa, combine all the ingredients in a small frying pan.  Cook over medium heat for 3 minutes or until onion is tender.
5 Spoon salsa on a serving plate, slice squid and arrange over salsa. Serve.
