Method:
1 Cook noodles following packet directions, drain well. Toss through the toasted coconut. 
2 Heat oil in a wok over high heat. Add onion, corn, chilli, garlic, kaffir lime leaves and squid , and stir fry for 2-3 minutes or until squid is tender.
3 Place the coconut noodles on a serving plate, top with squid mixture and mint leaves.
