Method:
1 Preheat the oven to 200°C fan forced.
2 Cut the pork into thick rounds, wrap each round with bacon and tie with kitchen string to secure.
3 Heat oil in an oven-proof frying pan over medium-high heat, cook pork for 2 minutes each side until golden. Transfer to the oven and roast for 8 minutes or until cooked to your liking.
4 Heat a small frying pan over a medium heat, add the butter and brown sugar, stir to dissolve the sugar, add the apricot halves, cut side down, and simmer for 6-8 minutes or until caramelized.
5 Arrange the pork on a serving plate, spoon over apricots, sprinkle with dill if desired. Serve.
Chefs tip you can use can apricots when fresh are not in season, reduce the cooking time in step 4 to 3-4 minutes.
