Method:
1 Boil, steam or microwave potatoes until tender. Drain and transfer to a bowl.
Boil, steam or microwave asparagus and peas until tender. Remove asparagus to a plate, drain peas and add to potatoes.
2 For the vinaigrette, whisk the red onion, vinegar and olive oil in a small bowl until well combined. Season with salt and pepper. Pour dressing over the potatoes and peas and toss gently to coat. Set aside for 5 minutes.
3 Spoon the potato mixture onto serving plate, top with asparagus, crumble over the feta. Season with pepper, sprinkle with chives. Serve.
