Method:
1 Heat a little oil in a frying pan over medium heat, add the bread cook 1-2 minutes on each side or until toasted. Remove to a plate.
2 Add the pancetta to the hot pan, cook until crispy. Add an egg and fry 1-2 minutes or until cooked to your liking.
3 Wrap the asparagus in damp paper towel and microwave on High/100% for 2-3 minutes or until tender.
4 Spoon the avocado onto the toasted bread, top with the pancetta, fried egg and asparagus, season with salt and pepper. Serve.
