Method:
1 Drizzle the pork cutlet with olive oil and season with salt and pepper. Heat a char-grill pan on medium-high, cook pork for 5 minutes on each side or until cooked to your liking. Rest for 5 minutes.
2 Dice the apple and place in a microwave-safe bowl, cover and microwave on High/100% for 2 minutes until tender. Process with brown sugar, mint, cayenne and chilli, until smooth.
3 Spoon apple puree onto a serving plate and top with the pork, season with salt and pepper, drizzle with extra virgin olive oil. Serve.
