Method:
1 Thinly slice the veal and place on a board, flatten with a meat mallet and arrange the on a plate.
2 Scatter the veal with capers and anchovies, squeeze over two of the lemon wedges and drizzle with olive oil. Scatter with chives. Serve with remaining lemon wedges
