Method:
1 Heat oil in a frying pan over a medium heat, add the pork chop and season with salt and pepper, cook 3-4 minutes each side or until cooked to your liking, place the passionfruit on to grill for the last few minutes, for garnish.
2 Combine the rocket and pistachios in a bowl, drizzle with lemon juice and olive oil in a bowl, season with salt and pepper, toss to coat.
3 Plate the pork chop, top with the salad with the grilled passionfruit to the side to serve.
