Method:
1 Heat a frying pan over medium heat. Add pine nuts and cook 1-2 minutes until toasted. Remove to a plate. Add a little oil and bacon to the pan and cook for 3-4 minutes or until bacon is crisp. 
2 For the dressing, combine balsamic vinegar, olive oil and salt and pepper in a small bowl, whisk to combine.
3 Place spinach on a plate, top with red onion, bacon and pint nuts, drizzle with dressing.  Serve.
