Method:
1 Preheat the oven to 200°C fan forced.
2 Heat oil in a frying pan over a medium heat, add the garlic and onion and cook for 1 minute until softened, add the spinach and ground coriander, toss quickly until wilted. Remove from the heat and set aside. Season with salt and pepper.
3 Lay 1 sheet of fillo pastry on a flat work surface. Brush with a little butter. Place another sheet of fillo on top. Repeat with butter and the remaining fillo.Top with the spinach and crumble over the fetta, fold into a parcel, brush with butter and place on a baking tray.
4 Bake for 8-12 minutes or until golden. Serve.
