Method:
1 Using a mortar and pestle crush the fennel, garlic, and 1 tbs lemon juice and rind with a pinch of sea salt to a paste. Spread paste over both sides of the pork cutlets.
2 Heat oil in a frying pan over medium heat, cook the pork for 4-5 minutes each side or until just cooked through. Rest for 5 minutes, then thinly slice.
3 Combine the fennel, capsicums, chilli and herbs in a bowl, pour over the remaining lemon juice and drizzle with olive oil, season to taste with salt and pepper.
4 Arrange the sliced pork on a plate, top with the slaw and serve.
