Method:
1 Preheat oven 200°C fan forced. Combine herb mix and 1 tbs oil in a bowl.  Rub over the lamb.  Stand for 10 minutes if time permits.
2 Place potatoes in a microwave-safe bowl.  Cover with damp paper towel and microwave on High/100% for 3-4 minutes until almost tender. Drain well and transfer to a tray lined with baking paper. Combine 2 tbs oil and crushed garlic and drizzle over potatoes, turning to coat.
4 Place rack of lamb in a roasting pan, place on the middle shelf and roast for 10-15 minutes for medium or until cooked to your liking. Place the potatoes above the lamb and roast for 10 minutes or until potatoes are crispy.
5 Place rack of lamb on a plate, sprinkle with coriander leaves and chilli and serve with chips.


Note Herbs de provence is a blend of dried marjoram, thyme, summer savory, basil, rosemary, fennel seeds and lavender.
