Method:
1 Preheat oven 200°C fan forced.
2 Boil, steam or microwave kipfler potatoes until almost tender.  Transfer potato to a baking dish, sprinkle with grated gruyere cheese. Roast for 5-7 minutes or until golden and tender.
3 Combine mustard and honey in a small bowl, rub over both sides of lamb cutlets.
4 Heat oil in a frying pan over medium-high heat, add cutlets and cook for 3 minutes each side for medium or until cooked to your liking.
5 Arrange the cutlets on a serving plate, sprinkle with diced tomato and season with salt and pepper, serve with cheesy potatoes
