Method:
1 Place the burghal wheat into a small bowl and pour over enough boiling water to just cover and set aside for a few minutes until soft.
2 Combine the watercress, tomatoes, red onion, chilli and herbs in a medium bowl.
3 Drain the burghal, rinse under cold water if still warm, drain well. Add to salad, squeeze over lemon juice and drizzle with olive oil, season with salt and pepper. Serve
