Method:
1 Preheat the oven to 200°C fan forced. Use a sharp knife to split the sausage casing, remove the sausage meat, discarding the casing.
2 Heat oil in a frying pan over medium heat, cook onion, garlic, chilli and capscium for 1-2 minutes until softened, add sausage meat, stir until brown all over, breaking up the meat with a wooden spoon, season with salt and pepper.
3 Lay 1 sheet of fillo pastry on a flat work surface. Brush with a little oil. Place another sheet of fillo on top. Repeat with oil and the remaining filo. Spoon mixture in the centre and fold to enclose into a parcel. Brush top with olive oil and place on a baking tray. Bake for 12-15 minutes or until golden.
4 Serve the parcels with extra red chilli, if desired.
