Method:
1 Combine the carrot, orange segments, avocado, flat leaf parsley and sultanas in a small bowl.
2 Squeeze over some of the orange juice and drizzle with olive oil, season with salt and pepper. Toss gently to combine.
3 Spoon the salad into a bowl and sprinkle with pistachios to serve
