Method:
1 Preheat the oven to 200°C fan forced.
2 Heat oil in a large frying pan over medium heat, add the garlic, onion and bacon and cook for 2-3 minutes, add the zucchini, tomato and thyme and cook a further 2 minutes until the zucchini is tender. Add the white wine and simmer for 2 minutes or until reduced slightly, stir in the cream and simmer until thickened, season with salt and pepper.
3 Spoon the mixture into a baking dish, top with the breadcrumbs and cheese, bake for 8-10 minutes or until golden. Serve
