Method:
1 Preheat oven 200°C fan-forced.
2 Heat oil in a frying pan over medium-high heat, add lamb rack and cook for 2 minutes on each side. Transfer pan to oven and roast for 10-12 minutes, for medium rare or until cooked to your liking. Rest for 5-10 minutes, then slice.
3 Combine fennel, chilli, salt and sugar in a bowl and set-aside for 5-10 minutes.
4 Place figs on a baking paper-lined baking tray and roast for 5-6 minutes or until figs soften a little.
5 Arrange fennel mixture on a plate, top with lamb and figs, crumble over the fetta. Serve.
