Method:
1 Heat oil in a frying pan over a medium heat, cook garlic and onion for 1-2 minutes, add the spices and cook for a further minute. Add the watermelon and toss lightly to coat, set aside.
2 Heat oil in another frying pan over a medium heat, cook lamb for 3-4 minutes on each side or until cooked to your liking.
3 Plate the watermelon and top with the lamb with parsley leaves to serve.
