Method:
1 Preheat the oven to 200°C fan forced.
2 Line a baking tray with baking paper, grated over the parmesan cheese and spread across the tray. Bake for 4-6 minutes until the cheese has melted and just turned golden, leave to chill and break into crisps.
3 Heat a char-grill pan over a medium heat, cook the bacon until crisp and bread until toasted.
4 Heat oil in a frying pan over medium heat, cook the steak for 3-4 minutes each side for medium or until cooked to your liking, add the egg to the pan with the steak and fry until cooked to your liking.
5 Combine the egg yolk, a drizzle of olive oil and white wine vinegar in a bowl, season with salt and pepper and whisk well.
6 Plate a slice of bread, top with the steak, bacon, tomato slices, lettuce, toasted parmesan and drizzle over the dressing, top with remaining toasted bread and serve.
