Method:
1 Preheat the grill element of the oven to medium-high.
2 Combine mince, coriander, cumin, fennel, onion and breadcrumbs in a bowl and season with salt and pepper. Press mixture into four patties. 
3 Heat a char-grill pan over medium heat, brush the pattie and eggplant with oil and grill for 3-4 minutes each side or until pattie is cooked through and eggplant tender. 
4 Top eggplant with mince pattie, repeat layers then top each stack with mozzarella cheese, place on a baking paper-lined oven tray.  Place under a preheated grill and cook until cheese is melted, serve
