Method:
1 Heat oil in a frying pan over a medium heat, add the chicken breast, season with salt and pepper and cook 4 minutes on each side or until cooked through. Remove to a plate, cover and set aside to rest for 5 minutes.
2 Combine the pear, carrot, daikon and Chinese broccoli in a small bowl, add lime juice and drizzle with olive oil, season with salt and pepper.
3 Plate the salad and top with the chicken and parsley leaves.
