Method:
1 Preheat oven 220°C fan-forced.
2 Heat oil in a frying pan over medium-high heat, add lamb and cook for 1-2 minutes on each side or until seared.
3 Boil, steam or microwave pumpkin until tender.
4 Lay fillo on a flat surface, brush with butter, repeat with remaining layers of fillo and butter. Place lamb in the center of fillo and top with leek, pumpkin and sprinkle with almond meal fold in edges and roll to enclose. Transfer to a baking paper-lined oven tray and bake for 6-8 minutes or until fillo becomes crisp and golden.
