Method:
1 Process lamb and parsley in a food processor until smooth, season with salt and pepper.
2 Place wonton wrappers on a flat surface, spoon 1 tbs of mince in the middle of 5 wrappers, brush edges with water and top with remaining wrappers and press to seal. 
3 Combine rice wine vinegar, lemon juice, soy sauce, stock, leek, chilli and ginger in a saucepan and bring to boil, reduce heat to low. Add wonton ravioli and cook for 3-4 minutes or until wontons are tender.
4 Transfer ravioli to a shallow bowl, top with mango, herbs and drizzle with sauce to serve.
