Method:
1 Heat a char-grill pan over medium heat, brush zucchini and tomato with a little oil and char grill for 3-4 minutes or until vegetables are tender.
2 Heat oil in a frying pan over medium heat, add haloumi and cook for 1-2 minutes each side or until golden. 
3 Whisk lemon juice and 2 tbs olive oil in a bowl and season with salt and pepper.
4 Arrange baby spinach, zucchini, tomato and haloumi on a plate. Pour over dressing to serve.
