Method:
1 Preheat the oven to 200°C fan forced.
2 Heat oil in a frying pan over high heat, cook pork for 1-2 minutes on each side or until seared all over, season with salt and pepper. Transfer pan to the oven and bake for 8-10 minutes for medium-well or until cooked to your liking. Rest for 5 minutes, then slice.
3 Heat oil in another frying pan over medium heat, cook the sweet potato slices for 3-4 minutes until golden. Season with salt and pepper.
4 Heat oil in another frying pan over medium heat and sauté the onions, pour in the stock and simmer for 3 minutes or until reduced. Season with salt and pepper.
5 Arrange the sweet potato on a serving plate and top with the sliced pork and spoon over the onion sauce to serve
