Method:
1 Heat a char-grill pan over medium-high heat, season lamb with salt and pepper and brush with oil. Char-grill lamb for 3-4 minutes each side, for medium rare, or until cooked to your liking.       
2 For chimichurri, blend lemon juice, herbs, Dijon, vinegar, garlic and a little olive oil in a blender or small food processor until smooth, season with salt and pepper. 
3 Place lamb on a plate and pour over chimichurri sauce to serve.
