Method:
1 Place the chicken breast on a chopping board using a meat mallet flatten to 8mm-thick, cut into 4 slices.
2 Place the flour in a shallow bowl, combine the egg and milk in a bowl and spread the breadcrumbs onto a plate. Dip the chicken into the flour then egg mixture then coat in breadcrumbs.
3 Heat oil in a large frying pan over medium heat, cook the chicken schnitzels for 3 minutes each side or until golden and cooked through.
4 Combine mayonnaise, lemon juice and fennel in a bowl and season with salt and pepper. Spoon the salad onto a plate and top with schnitzel and chives, serve with lemon.
