Method:
1 Heat oil in a frying pan over medium-low heat, add the fennel and cook for 6-8 minutes, stirring occasionally, season with salt and pepper, add the dill.
2 Cook noodles, following packet directions. Drain. Refresh in cold water.
3 Combine the sushi seasoning, soy and sesame oil in a small bowl.
4 Heat oil in a frying pan over a medium heat, cook the scallops for 30 seconds each side.
5 Arrange clean scallop shells on a plate, twist spoonfuls of noodles onto each shell and top with a scallop, scatter over the fennel and drizzle with the dressing to serve
