Method:
1 Preheat oven 200°C fan-forced.
2 Using a sharp knife cut a pocket in the beef, stuff with raclette cheese.
3 Place flour in a bowl and egg in another, then combine breadcrumbs and thyme in another bowl.  Dip the beef in the flour, egg, and breadcrumb mixture, pressing on with fingertips to secure the breadcrumbs.
4 Heat half the butter and half the oil in a frying pan over medium-high heat. Add the beef and cook 1-2 minutes each side until golden. Transfer to the oven and roast for 8 minutes for medium rare or until cooked to your liking.
5 Heat remaining butter in a saucepan over medium heat until butter is foaming, add capers and parsley and cook for 1-2 minutes or until butter turns a nutty brown colour. Pour over the beef, squeeze over the lemon juice and serve
