Method:
1 Preheat oven 200°C fan-forced.
2 Cut small slits in the mushrooms and stuff with garlic and thyme.  Wrap mushrooms in bacon.  Transfer to a baking paper-lined oven tray and drizzle with oil, transfer to the oven and roast for 10-12 minutes, or until bacon is crisp.
3 Transfer mushrooms to a plate, drizzle with balsamic vinegar and olive oil, season with salt and pepper, serve.
