Method:
1 Preheat oven 200°C fan-forced.
2 Heat oil in a frying pan over medium-high heat, add chicken and cook for 1 minute each side or until browned set aside to cool.
3 Lay 1 fillo pastry sheet on a bench, spray with oil, repeat with remaining layers.   Place the chicken in the centre of the fillo, top with blue cheese and parsley leaves and season with salt and pepper. Fold the pastry to enclose the filling, spray with a little oil and place parcel on a baking-paper-lined oven tray. Bake for 10 minutes or until golden and crisp.
4 Heat 1 tsp of oil and butter in a frying pan over medium heat, add spinach and cook, tossing, for 1-2 minutes or until spinach wilts. Place spinach on a plate and top with fillo parcel to serve.
