Method:
1 Melt butter in a frying pan over medium heat, cook lettuce for 1-2 minutes or until slightly wilted, season with salt and pepper.
2 Arrange the cos on a plate, top with the avocado, pinenuts, red onion and mandarin, season to taste and drizzle with olive oil to serve
