Method:
1 Thread fish, green capsicum, mandarin, onion and char-grilled capsicum onto skewers, season with salt and pepper and drizzle with oil.
2 Heat a char-grill pan over a medium heat, cook skewers for 5 minutes, turning until fish is cooked through.
3 Plate the skewers to serve.
